Weather, flower update, building a forest pergola, a first home object &
a most ridiculously good chocolate and coffee cake.
Weather update, April 5th.
It had first snow some centimetres on Wednesday (3rd of April). On Thursday night, the winds arrived from the south as they often do. Our house is about 700 meters from the sea, there is thankfully so many tall firs and birches in between, giving a somewhat ephemeral reassuring feeling that the trees slows the winds down. There is no surprise that the Southern Ocean, encompassing the roring, furious and screaming seas are one of the most dangerous waters on the planet. At those latitudes nothing is in their way,…their power grows exponentially … This thought gives me shivers… Anyhow back to northern latitudes, the winds howled the whole night which I love, on the forecast snow should start falling in the afternoon predicting about 10cm. On the Friday, we had planned to get some wood for a summer garden project, Dahlias bulbs, soil and seeds but all on that later. How spring optimistic it was of us… to fetch wood, bulbs and seeds while we were thrown strong winds and snow :) May I, shamelessly share that in our dreamy idea about warmer weather…we had already changed our winter tires to the summer ones, ah! We arrived back home, with a trailer full. It snowed the whole afternoon and night. Woke up back to a snow covered land.
It snowed, hailed or rained almost every day for the past three weeks.

Base structure is done, and one pillar raised. Still to do is planking the two levelled floor, 5 other pillars + the cross beams. Build a table, two benches. Paused until weather improves.
Chocolate and coffee cake.
My recipe :

The Cake:
•
200gr Dark chocolate
100gr butter + 70gr rapeseed oil
— Melt both chocolate and butter together (Bring to a boil hot water, then lower the heat. Place an other bowl over the hot water to float with chocolate and butter to melt. You could as well do it in your microwave if you prefer). Once melted pour them into a bowl.
— Add 210gr of sugar to the melted chocolate, butter and rapeseed oil. Beat the mixture with a hand whisk until well combined.
— Add a dash of rum and vanilla extract (no special measurements add to your preference).
— Two table spoons of cacao + two table spoons of instant espresso powder ( if you don´t have instant powder espresso, and you have granules you can place process them with mortar and pestle.
— Add then, 3 eggs to the mixture, hand whisk them until fully combined.
— Add five table spoons of almond flour. Combine well into the mixture.
— Pour the mixture into a paper lined round mold.
— Place into a preheated oven to 160°C for one hour. (always start the baking for less time and monitor, every oven are different so I would start with 45 min then add remaining 15 min while monitoring :)
— let the cake cool down for about an hour at room temperature, then placed it in the fridge together with the mascarpone icing. I usually left them a few more hours in the fridge. After a few hours, take both the cake, and coffee mascarpone out of the fridge and you are ready to spread the icing.

The mascarpone icing:

— Place all the following ingredients in the bowl of a mixing machine and whip until well combined. 200 or 250gr of mascarpone + a drizzle of maple sirup, vanilla extract + about three tablespoons of espresso powder & one tablespoon of powder sugar.

mara
I choose mara (of the sea). A few drops on my skin, I closed my eyes and it transported me on a warm windy day, walking through the forest in the archipelago. surrounded by the sea and forests, it resonated with my heart.
oleo
oleo is woody, and surrounded me with warmth, distinctive strength. an extra favourite.
